Shrimp Fried Rice - Better Than Takeout

Equipment

  • 10 shrimp peeled and deveined

Ingredients
  

Shrimp Marinade

  • ½ lbs Shrimp peeled and deveined
  • 1 tsp Sugar
  • ½ tsp Baking Soda or Baking Powder

Other Ingredients

  • 2 cups white rice long grain rice such as jasmine or basmati, cooked and dried out overnight in the refrigerator
  • 4 medium eggs beaten
  • ½ cup Veggies frozen peas, corns, and carrots
  • 2 cloves garlic minced
  • 2 scallions chopped, greens and whites separated
  • 1 tbsp light soy sauce
  • ½ tsp white pepper
  • ½ tsp sugar
  • 1 tsp salt
  • ½ tsp sesame oil

Instructions
 

Prepare the shrimp

  • In a bowl, marinate the shrimp with sugar and baking soda. Chill for 30 minutes.

Sear the shrimp

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Cook the Aromatics

  • In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the garlic until fragrant and translucent, about 2-3 minutes.
